This recipe is seriously so good. 5 of the most basic ingredients and a food processor can turn a tray of peashoot microgreens into something really, really special. I use walnuts but you can use any nuts you have or even sunflower seeds. You can add some basil if you want a more classic basil pesto flavour but I honestly don't think it needs it, the flavour of the peashoots is what sings here!
Ingredients

Tray of pea shoots (about 200grams)
You can grow pea shoots in about 10 - 12 days, they're really easy and fun to grow!

Handful of walnuts

2 galric cloves

Sea salt

Olive oil
Directions
Place your pea shoots, nuts and garlic in your food processor and pulse a few times to break everything up evenly. Scrape down the sides if needed.
Add a glug of oil and let the processor run for a few seconds, if the mixture looks very dry add a bit more oil. I like my pesto a bit chunkier and thick so 2 or 3 glugs of oil are perfect for the way I like it! Season with sea salt.
Serve stirred into cooked pasta and enjoy the freshest tasting homegrown pesto imaginebl!
