Like hummus? Then you'll love this sprouted chickpea hummus! Hummus is one of those amazing recipes where the sum of 4 simple ingredients: chickpeas, tahini, olive oil & lemon, result in a final product where each ingredient is essential to balance each other out. Once you have your hummus base you can get creative with other ingredients like sundried tomatoes, caramelised onions, garlic etc.
When you sprout something, in this case chickpeas, you kick start a process that rapidly starts increasing the nutritional value, bioavailability and digestibility of nutrient within the seed. [1]
More and more research suggests that chickpeas and hummus may benefit the consumer by aiding weight management, regulating insulin and can have a positive impact on preventing cardiovascular disease.
Sprouting has been around for millennia, with examples of use in Chinese medicine dating back 5000 years. Sprouting is one of the easiest ways to take a seed and grow it into a food that not only nourishes your body, but can also go beyond simple nourishment and offer a whole range of health benefits.

Ingredients

250g Sprouted Chickpeas

1 Large Lemon

4 Tablespoons Tahini
-
2 Tablespoons Olive Oil

2 Tablespoons Water
-
1 - 2 Cloves Garlic (optional)

Pinch of Salt

Pinch of Cumin
Directions
Add tahini and the juice of a lemon to your food processor and process until the tahini thickens up, about 1 minute.
Add chickpeas and garlic and process for 1 minute, scraping down the sides halfway through.
Add water to help loosen the paste and process for 4 minutes. The longer you process the smoother the hummus will be. Stop periodically and scrape down the sides to incorporate everything nicely.
Add olive oil and salt and process for a further minute. If your hummus is still too thick add more water to loosen it up to your preferred consistency.
Scoop your hummus into a bowl or container and drizzle with olive oil. Sprinkle with cumin powder and enjoy!
