Carrot microgreens are quick and easy to grow. Carrot greens are incredibly high in vitamin A, vitamin C, vitamin K, calcium, and iron. They're also high in dietary fiber, which is good for digestion and nutrient absorption, as well as carotenoids, which are good for your eyes.
Carrot is best suited to microgreen production but can also be sprouted. Sprouted carrot produces quite a low yield.
