Peas grow tall and fast and are a staple crop grown for the restaurant industry. After 12 days they send out long tendrils which are great for garnishing. Pea shoots produce a large crop or fresh, sweet, juicy pea flavoured stems and are great in sandwiches or sautéed as a side dish.
The speckled pea variety doesn't produce as many long tendrils and tend to grow taller than our green pea variety.
Peas can be grown as both microgreens and sprouts.
